The maceron, Smyrnium olusatum, is a member of the Apiaceae family. The Smyrnium genus comprises some 7 known species. The young shoots are prepared like celery, with a flavor reminiscent of celery. The leaves can be used to flavor dishes, and the flowering tops and roots can be eaten raw or cooked.
