Leafy Amaranth
Leafy amaranths belong to the Amaranthaceae family and the Amarantheae tribe. The Amaranthus genus comprises 87 known species, mainly in America, Australia and Eurasia. Leaves can be green, red, bronze... They are an excellent source of carotene, iron, calcium, protein, vitamin C and other trace elements. Young leaves can be eaten raw; older ones should be cooked. Harvest as needed.
