Celeriac - Apium graveolens var. rapaceum - belongs to the Apiaceae family. The Apium genus comprises some 30 known species. Raw or cooked, they are particularly popular in winter, as are all root vegetables. They generally keep well, and contain many minerals and vitamins, including vitamin K.
