Peruvian oca - Oxalys tuberosa - is a herbaceous plant of the Oxalidaceae family native to the Andes plateaus, where it is cultivated for its edible tuber. Closely related to the potato, ocas are exposed to the sun for a week, then cooked in various waters to soften them. White varieties are said to be less acidic than reds.
