Scorsonera
Scorzonera hispanica is a member of the Asteraceae family and the Lactuceae tribe. The Scorzonera genus comprises some 150 species. After peeling, scorzonera secrete a sticky substance that can be brushed off. To prevent them from oxidizing, place them quickly in lemon or vinegar water! Wear gloves to avoid blackening your hands. They can be eaten raw or cooked, in the same way as salsify, with which they are often confused.
