Bitter eggplants belong to two species: Solanum macrocarpon and Solanum aethiopicum, the Solanaceae family and the Solanum genus. This genus comprises some 1,700 known species. Like eggplants, they come in a range of colors, from green to white, orange and bright red. The flesh can be sweet or bitter to varying degrees. The fruits are eaten fresh, boiled, steamed, marinated or cooked with meats or other vegetables. Its leaves can also be eaten. Bitter eggplants play an important role in the African diet - particularly in tropical Africa - where they are the third most popular vegetable after onions and tomatoes.
