Wheat is an annual plant belonging to the Poaceae family and the Triticum genus. It is one of the three main cereals, widely cultivated throughout the world alongside rice and maize. Wheat has accompanied mankind for thousands of years, and the oldest archaeological remains, found in the Near East, prove that it has been cultivated for at least 9500 years. Wheat comes in a multitude of forms and varieties, from the "engrains" and "amidonniers" to the "épeautres" with dressed grains and the "blés durs", "blés poulards", "blés tendres", "saissettes", "touselles", etc., with naked grains. They are generally grown for their grains, which are then transformed into flour before being used to make bread, pasta and other food products.
