This variety, popular in Asian cuisine, produces green fruits 20 to 30 cm long. When ripe, they can be eaten like squash, and are covered with a waxy coating that allows them to keep for up to 2 years.
Benincasa is a Cucurbitaceae with a water and fiber content of almost 95%, giving it diuretic and digestive-system stimulating properties and a good supply of hydration. It is rich in vitamins B, C, E, K and provitamin A, as well as minerals such as copper, potassium, calcium, magnesium and zinc.
