Salsify
Salsify - Tragopogon porrifolium - is a member of the Asteraceae family and the Lactuceae tribe. The genus Tragopogon comprises some 50 known species. Salsify is a winter-harvested hardy plant, rarely found on our plates, yet rich in vitamins, fiber and minerals, as well as inulin - a carbohydrate with protective effects against certain cancers. Its flavor is reminiscent of asparagus and artichokes. It is the roots that are eaten. However, the flower buds can also be eaten before they bloom.
