Zaatar - Oregano
This hardy, semi-evergreen variety, also known as Syrian oregano, has downy, gray-green foliage with a strong fragrance. A staple of Middle Eastern cuisine, particularly Lebanese, it is used in the composition of 'Za'atar'.
Sow in a nursery in spring or autumn and plant out in the open at the 4-5 leaf stage, 30 cm apart in all directions.
Harvest from spring to autumn, choosing large stems close to the ground. To preserve, simply dry in a dry place.
