Chrysanthemum
Crown Chrysanthemums - Chrysanthemum coronarium - belong to the family Asteraceae and Tribe Anthemideae. The Chrysanthemum genus comprises some 160 known species. The young shoots and leaves are widely used in Chinese and Japanese cuisine, eaten raw in salads or cooked in stir-fries. They are cut off at the base when they are 15-20 cm long, to obtain new shoots. The flowers can also be eaten.
