Brussels sprouts
Brussels sprouts - Brassica oleracea var. gemmifera - belong to the Brassicaceae family and the Brassica genus. This large family comprises some 375 genera and 3,200 species. We eat the abundant buds at the base of the leaves, which are highly prized in the depths of winter and improve with frost. They can be cooked in a variety of ways, and even eaten raw. They contain three times as much vitamin C as oranges, plus many other vitamins and trace elements!
