Cauliflower
Flowering brassicas - Brassica oleracea var. botrytis - belong to the Brassicaceae family and the Brassica genus. This large family comprises some 375 genera and 3,200 species. Brassica is renowned for its excellent taste. It can be eaten raw, steamed or au gratin, and can also be enjoyed in soup, velouté or purée. Like all cabbages, it is rich in vitamins and trace elements. Its nutritional composition is similar to that of broccoli. Thanks to its vitamin B9 content, it is an excellent food for pregnant women.
