Turga - Parsnip
This variety, an improvement on the "Guernsey" parsnip, produces smooth, white roots, 25 to 30 cm long, with a sweet, coconut-like flavor. The young leaves can be eaten in salads and the rest in soup.

Sow directly in the ground, in rows 30-40 cm apart. Cover seeds and press down. When plants have 4 to 5 leaves, thin out to keep one plant every 15 cm. Water regularly.
Parsnips are very cold-hardy, so they can overwinter in the garden. Frosts even bring sweetness and flavor to the roots. They can also be harvested and cellared. The leaves are also edible.
