Parsnips
Parsnip - Pastinaca sativa - is a member of the Apiaceae family. The Pastinaca genus comprises 15 known species. To preserve its flavor and aromas, we recommend brushing rather than peeling. Parsnips can be eaten raw or cooked, grated, sautéed, in soups, gratins or pancakes. In the past, it was used to make syrups and jams.
